About the course

Get the skills you need to conduct internal or external Food Safety audits and a comprehensive and practical understanding of the food safety regulatory standards, such as HACCP, ISO 22000:2018, and the National Food Safety Auditor (NFSA) scheme.

This 5-day course will show you how to audit a food safety management system in alignment with ISO 19011:2011. We also cover how to identify, evaluate, and control food safety hazards so you can give confidence that your food safety management system meets national and international standards. 

This course meets the formal HACCP training requirements of Australian Retailers, GFSI Standards (BRC, SQF) and other relevant Standards. 

This course has the equivalent of 40 Continuing Professional Development (CPD) points.

Course content

This course is divided into two modules, enabling you to attend all modules in the one week, or spread across different sessions. The first 2-day module is equivalent to our ‘Becoming a Skilled Lead Internal/External Auditor’ course where you learn how to conduct an audit of any management system in accordance with ISO 19011. The remaining 3-day module covers the ISO 22000 management system standard and HACCP requirements respectively.

Prerequisites

There are no prerequisites.

Assessment

All assessment is during the course and there is no homework. Throughout the course, you will complete:

  • A documentation review
  • An audit plan and audit timetable
  • An audit checklist
  • An audit report, with findings attached

There is also assessment of:

  • Audit interview skills
  • Performing an Opening and Closing Meeting
  • Participating in an audit team meeting
  • Case study review
  • Evaluation of Food Safety audit scenarios

The final piece of assessment is a short exam.

You will prepare, complete, and hand in copies of their assessments during class – there is never any homework!

Prior experience in auditing and management systems is not essential.
