About the course

Learn the principles and application of HACCP with this 2-day HACCP course. Get the skills and knowledge to develop a hazard analysis critical control (HACCP) based food safety plan and to oversee its implementation and monitoring.

Our course will help you to understand the Principles of Codex HACCP and how you can use them to develop a HACCP plan which will identify, evaluate and control food safety hazards within your organisation. Our food safety training experts will guide you through the requirements of HACCP in full so you can implement a system that demonstrates your commitment to food safety and manages your risks effectively. You will also learn about applicable Food Safety Legislation, Pre-requisite Program, the Ethics of Food Safety and how to best apply them for the benefit of an organisation. This course also meets the formal HACCP training requirements of Australian Retailers, GFSI Standards (BRC, SQF) and other relevant Standards. 

This course has the equivalent of 16 Continuing Professional Development (CPD) points.

Course overview

This course will give you an understanding of the key components of a HACCP-based system and the essential elements required to manage food safety risks effectively.

You will learn:

  • HACCP plan development and implementation
  • Types of hazards in food safety
  • Emerging concerns in the food industry
  • Verification and validation activities
  • Pre-requisite programs and their role in food safety systems.

This 2-day course will leave you with knowledge of the principles and application of HACCP. It can be joined to an additional module: Becoming a Skilled Lead Internal/External Auditor, where participants learn how to conduct management systems audits in accordance with ISO 19011:2018 Guidelines for Auditing Management Systems. Day 1 – Wednesday   

Introduction to food safety & HACCP  

  • HACCP plan introduction

  • Food Safety Legislation including Food Standards code  
  • Prerequisite programmes  
  • HACCP Steps 1 to 6 including Workshops  
    • Assemble HACCP team  
    • Describe product  
    • Identify intended use  
    • Hazard analysis and control.  

Day 2 – Thursday  

  • Documenting and implementing a HACCP Plan  
  • Food safety hazard identification and controls  
  • Food pathogens  
  • HACCP Steps 7 to 12 including Workshops to determine and establish Critical Control Points (CCP) including:  
    • critical limits, monitoring systems, corrective actions, verification & validation requirements, documentation and record keeping  
  • Validation of CCPs  
  • Validation verification  

HACCP plan review.

Upon successful completion of the course, each participant will receive a Certificate of Attainment which identifies the Exemplar Global competency below:

If you additionally complete our Becoming a Skilled Lead Internal/External Auditor course, you may also be eligible to complete the BSBSS00128 Lead Auditor Skill Set to attain four Nationally Recognised Training Units of Competency. 

There are no prerequisites for this course.

You will complete a series of workshops during the course, which form part of the assessment. Upon the completion of each module there is a short multiple-choice quiz. You will receive continual assistance and feedback from the facilitator.

Designed to cater to a variety of people currently involved in the development and/or management of Food Safety Programs, you should attend if you:

  • want to meet the formal HACCP training requirements of Australian Retailers, GFSI Standards (BRC, SQF) and other relevant Standards
  • want to become an Exemplar Global HACCP Practitioner
  • need to develop or improve a HACCP Plan
  • are involved in the Food Safety management process.
  • wish to activity participate in a HACCP Team
  • wish to consolidate your existing knowledge into a formal qualification.

A food safety industry background is preferred, however prior experience in food safety is not essential.

To become a registered third-party auditor under the Exemplar Global scheme, you’ll need this course plus the units of competency awarded in our Becoming a Skilled Lead Internal/External Auditor course – Exemplar Global AU26 Auditing management systems and Exemplar Global TL26 Lead audit teams.

If you wish to obtain the four nationally recognised training units, you’ll need to complete the Becoming a Skilled Lead Internal/External Auditor course and undertake the additional assessment.
