Our 3-day Food Safety Management Systems course provides you with a comprehensive and practical understanding of HACCP principles, the Food Safety Management Systems ISO 22000:2018, and the National Food Safety Auditor (NFSA) scheme.

Learn how to identify, evaluate and control food safety hazards within your organisation so you can develop, maintain, improve, and manage a system that demonstrates your commitment to food safety.  

This course meets the formal HACCP training requirements of Australian Retailers, GFSI Standards (BRC, SQF) and other relevant Standards.

Course overview

This course provides practical insight into Food Safety Management Systems, food legislation, and HACCP, with a focus on what auditors need to know when reviewing food safety systems.

You will learn to:

  • Understand the structure and requirements of a food safety management system in alignment with ISO 22000:2018
  • Identify key food safety system requirements
  • Navigate relevant food legislation
  • Apply the principles of HACCP – Hazard Analysis and Critical Control Points
  • Understand components of a food safety program
  • Recognise what an auditor should look for in food safety audits
  • Know what an auditor needs to understand about food safety and the audit process
  • Become familiar with key terminology and concepts in food safety programs
  • Apply food safety management principles in the context of ISO 22000:2018
  • Relate the food safety management system to organisational products, services, and operations
  • Identify documentation required by ISO 22000:2018
  • Understand common challenges in implementing a food safety management system.

This 3-day course will leave you with knowledge of the ISO 22000 Food Safety management systems standard. It can be joined to an additional module: Becoming a Skilled Lead Internal/External Auditor where participants learn how to conduct management systems audits in accordance with ISO 19011:2018 Guidelines for Auditing Management Systems. Day 1 – Wednesday  

Introduction to food safety & HACCP 

  • HACCP plan introduction 
  • Context of food safety 
  • Overview of industry recalls 
  • Food Safety Legislation including Food Standards code 
  • Prerequisite programmes 
  • HACCP Steps 1 to 6 including Workshops 
    • Assemble HACCP team 
    • Describe product 
    • Identify intended use 
    • Hazard analysis and control. 

Day 2 – Thursday 

Documenting and implementing a HACCP Plan 

  • Food safety hazard identification and controls 
  • Food pathogens 
  • HACCP Steps 7 to 12 including Workshops to determine and establish Critical Control Points (CCP) including: 
    • critical limits, monitoring systems, corrective actions, verification & validation requirements, documentation and record keeping 
  • Validation of CCPs 
  • Validation verification 
  • HACCP plan review.  

Day 5 – Friday  

Application of food safety management systems 

  • Review of food safety management system requirements 
  • Food safety audit scenarios and the application of food safety management systems standards 
  • Course review. 

Upon successful completion of the course, you will receive a Certificate of Attainment with the following Exemplar Global competencies: 

  • Exemplar Global FS – Auditing food safety management systems. 
  • Exemplar Global NFS-1 – Assess compliance with food safety programs 
  • Exemplar Global NFS-2 – Communicate food safety audits  
  • Exemplar Global NFS-3 – Conduct food safety audits 
  • Exemplar Global NFS-4 – Identify, evaluate, and control food safety hazards 
  • Exemplar Global HP – Developing HACCP plans 

If you additionally complete our Becoming a Skilled Lead Internal/External Auditor course, you may also be eligible to complete the BSBSS00128 Lead Auditor Skill Set to attain four Nationally Recognised Training Units of Competency.

There are no prerequisites for this course. 

You will complete a series of workshops during the course, which form part of the assessment. Upon the completion of each module there is a short multiple-choice quiz. You will receive continual assistance and feedback from the facilitator.

You should attend if you:

  • Want to become an internal food safety management systems auditor 
  • Need to develop or improve a food safety management system  
  • Are involved in food safety processes or compliance 
  • Are a manager responsible for a food safety management system or its auditing 
  • Wish to formalise and build on your existing knowledge with a recognised qualification.

A food safety industry background is preferred, however prior experience in food safety is not essential.

    To become a registered third-party auditor under the Exemplar Global scheme, you’ll need this course plus the units of competency awarded in our Becoming a Skilled Lead Internal/External Auditor course – Exemplar Global AU26 Auditing management systems and Exemplar Global TL26 Lead audit teams.

    If you wish to obtain the four nationally recognised training units, you’ll need to complete the Becoming a Skilled Lead Internal/External Auditor course and undertake the additional assessment.
